My Everyday Coleslaw
Serves 4-6,
Great with panfried sausages, schnitzel, steak, chicken, fish, or in burgers and sandwiches.
Half a small Savoy cabbage, central core removed, cabbage thinly sliced
1 large carrot, coarsely grated
1 medium red onion, thinly sliced
Half a cup chopped gherkins
Handful coriander, chopped
3 tablespoons chopped parsley
2 tablespoons capers
1/3 cup plain unsweetened yoghurt
1/3 cup bought mayonnaise (I used best foods)
2 tablespoons cider vinegar
Put everything into a large bowl, mix well taste and season.
