Pasta with Sausages and Peppers Recipe
This is my take on the pasta, sausage and pepper dishes that are found in many parts of Italy. I love this Italian inspired summer pasta dish, it almost cooks itself it is so easy.
4 tablespoons extra virgin olive oil
2 cloves garlic, finely chopped
500g Pork and Fennel sausages or your favourite pure pork sausages, sliced 3cm
1 onion, thinly sliced
2 red and 2 yellow capsicums, cored seeded and sliced 2cm
400g can chopped tomatoes
400g short pasta such as Caserecce or penne
75g parmesan, grated
chopped parsley for serving
Heat the oil in a large frying pan over moderate heat.
Add the sausages, onion and capsicums.
Fry gently for 15 minutes or until the sausages are lightly browned and the capsicums tender.
Add the tomatoes, bring to the boil and simmer 5 minutes.
Taste and season with salt and freshly ground black pepper.
Meanwhile boil the pasta in a large saucepan of well salted water until al dente.
Drain and place in a large warm serving bowl.
Add the sausage mixture, toss and serve sprinkled with parsley and parmesan.
Serves 4.
