Pasta with Walnut Pesto, Potatoes and Beans Recipe

Pasta with Walnut Pesto, Potatoes and Beans Recipe

  • ¾ cup walnut halves

  • 1 clove garlic, chopped

  • 2 cups parsley sprigs

  • ½ cup extra virgin olive oil

  • 3 tablespoons cream

  • salt and freshly ground black pepper

  • 300g Italian dried short pasta such as penne.

  • 3 medium sized floury potatoes, peeled and diced 3cm

  • 200g green beans, stalk ends removed, beans halved

  • freshly grated Italian parmesan for sprinkling

Put the walnuts, garlic and parsley into a food processor and process them until smooth.

Slowly add the oil until it is all incorporated.

Stir in the cream, taste and season. Reserve.

Bring a very large saucepan of well salted water to the boil and add the pasta and potatoes.

Stir until the water comes back to the boil so that the pasta does not stick.

Simmer for 10-12 minutes until the pasta is almost al dente and the potatoes tender.

Add the beans and boil a further 3 minutes.

Drain everything and place in a large warmed serving bowl.

Add the pesto and toss quickly and serve well sprinkled with parmesan.

Serves 4-6.
