Slow Cooked Pork with Chinese Flavours
4 tablespoons Hoisin Sauce
3 tablespoons Japanese soy sauce
1 cup apple juice
5cm piece ginger, thinly sliced
5 cloves garlic, peeled and squashed
¼ teaspoon chilli flakes
1.7kg pork shoulder roast, bone in
1 cucumber, peeled and cut into chunks
handful of coriander leaves
1 red chilli thinly sliced
steamed rice for serving.
Preheat the barbecue or oven to 180°C
Put the Hoisin sauce, soy sauce, apple juice, ginger, garlic and chilli flakes into a bowl and mix well.
This is the marinade.
Put the pork into a small roasting dish and pour the marinade over the top, turn a few times then marinate 1 hour, turning occasionally.
Cover the roasting dish with foil and place in the barbecue or oven for 3 hours or until the pork is very tender.
Remove from the oven and slice or break the pork into small pieces.
Serve on rice with cucumber, coriander and chilli.
