South East Asian Baked Salmon Recipe
Salmon fillet is baked in the oven and served with a chunky sweet This is a great dish for a dinner party or special lunch as well as a mid week dinner with the family. The sweet and sour dressing cuts through the richness of the salmon. Good with steamed Jasmine rice.
3 tablespoons fish sauce
3 tablespoons lime juice
150g cherry tomatoes, halved
1 red chilli, thinly sliced
Pinch of chlli flakes
1 ½ tablespoons crushed palm sugar
1 teaspoon sesame oil
100g green beans, blanched in boiling water for 3 minutes, cooled under cold water, well drained
2 tablespoons grapeseed oil
700g skinned boned salmon fillet
4 tablespoons bought fried shallots
Coriander, mint and basil sprigs for serving
Preheat the oven to 200°C
Put the lime juice, fish sauce, tomatoes, red chilli, chilli flakes, sugar and sesame oil into a bowl and mix well so the sugar dissolves.
Add the beans and reserve
Rub the oil all over the salmon and place it on a baking paper lined, shallow oven proof tray
Season with salt and place in the oven for 15 minutes or until just cooked.
Remove from the oven and slide the salmon off the paper onto a serving platter.
Spoon the tomato mixture over the top and serve.
Serves 6.
