Thai-style Steak Salad
1 red onion, very thinly sliced
2 teaspoons sugar
4 tablespoons lime juice
4 tablespoons fish sauce
2 tablespoons water
1 teaspoon sesame oil
1 red chilli, thinly sliced
350g green beans, stalk ends cut off,
250g cherry tomatoes, halved
½ cucumber, peeled, cut into small chunks
1 clove garlic crushed with ½ teaspoon salt
3 tablespoons vegetable oil
500g steak of your choice
½ cup roasted unsalted peanuts,
small handful mint and coriander leaves
Put the onion, sugar, juice, fish sauce, water, sesame oil and chilli into a small bowl.
Mix well until the sugar dissolves.
Reserve. This is the dressing.
Drop the beans into a saucepan of boiling salted water, bring back to the boil, boil 2 minutes then refresh under cold running water until cold.
Drain well and place on a serving platter.
Put the tomatoes and cucumber on top.
Mix the garlic, and vegetable oil and spread all over the steak.
Panfry or grill the steak over high heat until well browned and cooked the way you like it.
Remove from the heat and rest then slice thinly on the diagonal across the grain of the meat.
Place the sliced steak on top of the salad.
Spoon the dressing over everything.
Serve sprinkled with mint and coriander.
