Dutch Almond Cake and Stewed Apples Recipe
125g butter
1 teaspoon each vanilla and almond extracts
1 cup caster sugar
1 egg beaten
1 1/2 cups flour
sliced almonds for decoration
icing sugar for dusting
Preheat the oven to 200°C
Butter and paper the bottom of a 10cm x 35cm cake tin, or equivalent volume in a different shaped tin.
Beat the butter, extracts and sugar until pale and fluffy.
Beat in the egg. Stir in the flour and pour into the tin. Sprinkle the top well with sliced almonds. Place in the oven and bake 25 minutes until puffed up and well browned.
Remove from the oven, cool and take out of the tin. Serve in slices, dusted with icing sugar, with the apples and whipped cream if desired
Serves 6.
6 apples, peeled, cored, sliced 1 cm thick
½ cup water
½ cup caster sugar
zest of 1 lemon
Place the apples and water into a saucepan, bring to the boil and simmer for about 5 minutes until the apples are tender. Remove from the heat, stir in the sugar and zest and cool.
