Italian Apple Cake Recipe
100g butter
100g caster sugar, plus extra for sprinkling
3 eggs
1 teaspoon vanilla extract
zest of 1 lemon
2 teaspoons fennel seeds
30g rice flour
100g ground almonds
1 teaspoon gluten free baking powder
4 large apples, peeled, cored and sliced thinly
whipped cream for serving
Butter and paper the bottom of a 23cm diameter loose bottomed cake tin.
Preheat the oven to 180°C
Beat the butter and sugar until pale and creamy. Beat the eggs in one at a time.
Stir in the vanilla, zest, fennel seeds, rice flour, almonds and baking powder, then stir in the apple slices.
Allow to sit for 10 minutes, sprinkle it well with sugar then place in the oven and bake for 40-50 minutes or until very well cooked.
Remove from the oven and serve in wedges warm with whipped cream.
Serves 6.
