Tamarind Fruit Salad Recipe
This is a southeast Asian take on fruit salad, great after a rich meal.
Any combination of tropical fruit is good with the syrup.
120g Thai palm sugar, grated
small pinch salt
100ml water
2 tablespoons Patai Norasingh Tamarind paste
400g watermelon, peeled, seeded, cut into 3cm pieces
½ pineapple, peeled, cored, cut into 3cm pieces
350g Prince or Rock melon, peeled, seeded, cut into 3cm pieces
1 kaffir lime leaf, central stalk discarded, leaf very finely sliced
¼ cup long strand coconut, toasted in a dry pan over moderate heat until goden.
Mint leaves for serving
300ml coconut cream
Put the sugar, salt and water into a saucepan and bring to the boil stirring to dissolve the sugar.
Remove from the heat, chill then stir in the tamarind paste and chill again.
Put the fruit and kaffir lime in a bowl and add the syrup. Mix well.
Serve the fruit salad in bowls or glasses with the coconut and mint leaves sprinkled on top and the coconut cream on the side for pouring.
