Watermelon Salad Recipe By Ray McVinnie
1.25kg watermelon, peeled, seeded and diced 4cm
1 red chilli, thinly sliced
zest of 1 lime
1 kaffir lime leaf, very thinly sliced
1 tablespoon thinly sliced coriander stalks plus coriander sprigs for serving
50g palm sugar
3 tablespoons lime juice
large pinch salt.
30g freeze dried mandarin segments (optional)
425ml can coconut cream
Put everything except the mandarin segments (if using) and coconut cream into a bowl and toss gently but well.
Place on a serving platter, sprinkle the mandarin segments and some coriander sprigs on top and serve with the coconut cream on the side.
Serves 6.
