Eton Mess Recipe
A classic English pudding that has a few ingredients, is easy to make and always pleases.
500g strawberries, hulled and halved
150g raspberries
8 small bought meringues, broken into bite sized pieces.
400ml cream, whipped
Put half of the strawberries into a blender and blend until smooth.
Pour into a bowl, cover and refrigerate. This is the sauce.
Put the raspberries into a bowl and crush half of them with a fork.
Add the remaining strawberries, the meringues and the whipped cream.
Fold together briefly so it has a ripple effect.
Serve in small bowls or glasses with the sauce spooned over it.
Serves 4.
